Core and Rinse your Jalapenos, Set aside. *See notes if you'd prefer milder jalapenos.
Saute Sausage until brown, drain well.
While Sausage is hot, mix in bowl with softened cream cheese.
Mix in Cajun Seasoning (Or your favorite seasoning).
Place jalapenos in cooking rack.
Stuff each jalapeno until full of mix. Funnels work well for this step.
Place in Smoker at 250F for 90min to 2 hours, or bake in oven at 350F for 25 - 30 min. Cook until jalapenos are tender.
Mild or Hot? Green jalapenos tend to be milder, while their Red or Orange siblings are usually hotter. To make jalapenos their mildest, remove the seeds and membrane. The membrane is a thin, blistered layer slightly lighter than the rest of the pepper.
It's a good idea if you are sensitive to jalapenos, to wear gloves while you prepare this dish and don't touch your face or eyes until you've washed your hands with soap and water.

These are great! Try wrapping each jalapeno with a slice of bacon. OMG!
