Makes any meal special!

 3 large white potatoes
 1/2 cup margarine
 1/2 cup whipping cream or evaporated milk
 1 teaspoon Cajun seasoning
 2 tablespoons finely chopped white onions
 1/3 cup finely chopped green onion
 1 cup grated cheddar cheese
 1/2 to 1 cup smoked sausage, mild or hot, andouille or tasso (Cajun ham), finely chopped

Preheat oven to 325F

Chop desired meat until finely diced. Set aside

Bake potatoes until you can easily pierce with fork (about one and a half hours.)

Increase oven temp to 400F

Cut potatoes lengthwise, scoop out potatoes, leaving enough of the potatoes to hold shells firmly together.

Whip removed potatoes with margarine, cream, seasoning, onions, meat and cheese.

Refill potato shells with mixture.

Reheat at 400 for 20 to 25 minutes or until outsides brown.
